Algerian Bourek Bel Kefta

INGREDIENTS:

(Make about a dozen Boureks)

- 9 ounces ground beef

- 1 tbsp vegetable oil

- 1 medium onion, finely chopped

- ½ tsp all-spice

- Pinch ground cinnamon

- 2 tbsp fresh parsley, finely chopped

- 1 tbsp cilantro, finely chopped

- Ground black pepper

Regular Afghan naun is made with a fermented starter, and although the yeast will give the necessary leavening, the flavor will not be quite the same. The baking in the pit oven (tondoor) also may impart a little flavor which won't be present in oven baking. In spite of all this, however, this should be an acceptable product.

INGREDIENTS:

1 cup ketchup 2 teaspoons water 2 teaspoons brown sugar 1/4 teaspoon Tabasco sauce 1/4 teaspoon garlic powder 1/4 teaspoon onion powder 1/4 teaspoon pepper 1/4 teaspoon salt 1/2 teaspoon worcestershire sauce

METHOD:

In a small saucepan, add all the ingredients and cook over medium heat. Stir until the sauce begins to boil, about 7 minutes. Remove the pan from the heat. Allow to cool, covered. Keep refrigerated, covered. Keeps for at least a month.

Delicious Chicken Tetrazinni

(8 - 10 Servings)

INGREDIENTS: 

1 boiled chicken 1/2 lb. macaroni 1/2 lb. mushrooms, sauteed 2 cups chicken broth 1/2 cup almonds slivered 3 tbsp. butter 2 tbsp. flour 1 cup whipping cream 3 tbsp. white wine, dry

METHOD:

Cut meat from chicken bones. Cook macaroni, drain, add mushrooms and almonds. Make sauce of butter, flour, broth; remove from heat, stir in cream, wine. Preheat oven to 375 degrees. Add 1/2 sauce to chicken, 1/2 half to macaroni. Place macaroni in baking dish, greased, make hole in center, fill with chicken. Bake until lightly browned.
